Some equipment notes
I use a 3 man tent, packs down to about 18"x5" and
weighs about 5ish pounds. It sets up easy(I usually let the kids do it)
and is reasonably comfortable. I picked it up at a sports super store for about $100usd. I can't recommend enough the stove, an MSR whisperlite, its super small, lights easily and is adjustable enough to cook without carbonizing the food. It'll use any fuel and has been very dependable.
I use dirt/sand to clean the pots (I know, sounds disgusting, but it works) it scours, cleans and is always handy.
I've since modified what I pack, new stuff is in white, stuff I no longer carry is crossed off.
